I believe I have Weightlifter's Shoulder. I'm taking a week or two off from lifting weights, but is stretching OK? I've been following this: https://youtu.be/2y5jWZbh4XI
Otherwise, should I just completely rest and not do anything at all?

Stretching should be fine so long as it's unresisted, does not cause pain, is within your normal range of motion and so long as you closely monitor it.
The issue here is that inflammation can cause irritation to your shoulder joint complex, so the extent of work you'll have to do in rehab can only really be determined once you give it time enough to heal. Treat yourself kindly and be smart, otherwise, see a PT if you want a personalised plan for recovery.
