New to lifting, and confused about a few things with the SL 5x5 program.

5x5 is your working sets, doesn't include warm up

The 5x5 refers to the 5 sets at your working weight. This should be lower than your max weight, but don't include your warmup sets.
Eat calorie-dense foods like butter and ice cream if you're meeting your protein requirements
