3x for all if novice.

If intermediate/advanced, bigger muscles like legs and gluteus get 2x a week, and smaller muscles like delts and forearms 4x a week

novice here. In a curious tone, what happens if you lift 7 times per week, or work out ridiculous amounts of sets?

It really depends desu. Theoretically you could train every day, just having deload days and likewise with lighter weights as long as you switch the muscle group you should be good. It's not reccomended as rest days are neccecary for your muscles to recover but I digress.

You burn your self out.

I've tried it before and I could do it for a few weeks but eventually you just crash and your workouts go to shit. It's best to just stick to 3-4 lift sessions a week and 5-6 days of cardio for long term efficiency.

you get overtrained and lose strength. good line is "you don't get stronger from lifting weights, you get stronger from recovering from lifting weights". if you overwhelm your body's ability to recover, you will actually regress
