What does cheese taste like? Why western people are so fond of it?

The only cheese I've eaten is pic related and it tasted terrible.

This is not cheese so to speak. It's a dairy specialty. It's closer to cream and salt than actual cheese. You should come to France, we have like 3000 different types of cheese, but the principle is to fermentate cow/goat/whatever milk with particular strains of bacterias for several months. This is highly dependant on the environment hence why certain cheese can only be made in certain regions that have caves where a complex mixture of molds is found. Like wines, there are certain guidelines to follow for them to be called certain names.
