Is there any con to eating just one meal a day?
Even if I get enough calories and macros for the whole day? I'll be living on a college campus soon, and eating once a day at one of their dining halls would be cheaper than cooking.
It's buffet-style, and the food is varied and has nutrition info cards.

it is an extreme form of IF, really extreme. But it can be done. The real bat part will be to balance your macros if it is an open buffet.
An in practical ways, the worst will be the fullness that you will feel. I would a climate myself in a few weeks, not jump directly to it. And walk after eating the great meal.

Your immune system isn't as strong
Then on top of that some people will use caffeine to push hold over until the evening to eat which affects your immune system more
On top of that, they may not be drinking enough water, so that will mess with the immune system more
