How do I efficiently continue strength training (5x5 SL), while doing bodyweight conditioning classes followed by BJJ x3 weekly (Monday, Wednesday, Friday)?
I just feel fucking fatigued all week and barely recover over the weekend by the time Monday arrives.
Goal is primarily strength but I'd like to gain more muscle

Eat more. Legitimately do GOMAD in addition to you normal eating.
Naps help. Go to sleep earlier if possible. Epsom salt baths also help.

Could switch to 5/3/1. Slower progress but bjj is your conditioning and you won't be lifting so close to your max all the time. Less intense = easier to recover and still progressing.
