Are there any effects to eating less than 500 calories a day as opposed to just water fasting? How much of a difference will 500 calories make, would it be better to just eat nothing at all?
This isn't longterm, but I wanted to do a week long water fast but my family really makes it difficult and they try to force me to eat dinner daily so I figured I'll just eat as little as possible.

My understanding is that the point of a long term fast is to effectively stop your digestion process. You feel like shit for the first few days until your body gets used to getting calories from fat reserves; if you eat even a little during the day then you'll start up the digestion again and you wil continue to feel like shit (because your body still expects to get nutrition from food).
If you do a liquid fast I think you have to go all in, maybe look into intermittent fasting if you are going to have to eat during a certain time of day.
