Depends on your employer. Some are willing to employ dyels with no prior experience, some only employ guys that look like they lift, some employ anyone that looks big(including fat guys) and some employ only guys with prior experience in military, law enforcement or security.

Depends on where you work. I for one hate nightclubs because you constantly have some drunk dyel try to start shit with you simply because he wants to look tough. Concerts and festivals are a lot better usually, less people that try to start shit and sometimes you even have some people come up to you and offer to buy you a drink or get you something to eat.
Things outside of that like fairs, personal protection or guarding gated communities/mansions is usually just a whole lot of standing around without having anything to do.

The thing about that is, in a fight between two similarly matched people, knife guy wins 90% of the time. In a fight between quite a heavily physically superior guy vs knife guy, if the superior guy sees it coming, it's a 70-30 to knife guy (with injuries and sometimes lethal damage because ya know, knives, woo), but most insane crackheads aren't gonna just walk up to you knife raised and yelling, they'll pull it out of nowhere. Suddenly a guy who's just a nuisance that you're trying to calm has stabbed you (possibly a few times) and boom, it's over, no adrenaline, no moves to protect yourself, no retaliation. You gotta be careful about those freakshows that bring knives.

If you want to be intimidating you really need to focus on big traps, big back, big forearms. Everyone is used to seeing big pecs, so prioritize your chest last.

One of the bars I used to go to was in a pretty seedy area, and was decently popular. There was only one bouncer tho, this guy named Liu. Liu was a 65 year old Chinese man that I'm pretty sure was the head of some monastery. Why he worked at a bar I wasn't sure, but I saw him floor 4 big guys coming at him, Liu using some crazy Aikido shit.

Don't have to be big, just command respect somehow. Sure size is a shortcut to that, but so is good communication, confidence, or being on shittons speed.

I've been bouncing 6 or 7 years in australia and am broad at 6'6", but am basically a nerdy skinnyfat with muscle added from minimal lifting and a fair amount of martial arts. After filling out a bit I have noticed that people treat me with more deference, but stomping the back of someones knee and putting a choke on isn't exactly rocket science (it also isn't ideal use of force, but if things have suddenly gone batshit insane that's basically what you'll be doing).

With regard to knives and all that stuff, I see it as a big reason not to be a jerk bouncer. I always try to talk to people about their problems. But you have to remember most venues that expect trouble run teams of bouncers. Sure, if you have a knife you might get one on the way in, but how pleasant do you think your life will be once the other three hit you?

While some guys definitely get hired for their size, you don't have to be particularly big to be good at the job. You do have to be able to command respect and deescalate situations.

Employers are usually looking for a guy that can hold his own when necessary, but has the social skills to get a customer to leave without putting hands on him. Physically throwing out a rude, drunk customer is great, but if he cracks his head on the sidewalk, the ensuing lawsuit is going to cost the club a lot of money.

Any venue who recruits security staff on size is badly manged and waiting for an accident to happen, typically a huge fucktard going on a spree and punching teenage girls in the face. (i've seen this with my own eyes, and it's fucking ugly. Worst case I remember, ~10years ago in Spain, a 250lbs roid freak jumped down with both feet on the chest of an unconscious 19 year old, killed the kid, fucker is still in prison last I checked)

90%: patience when facing abuse from drunken idiots, crowd control to prevent stampedes in confined spaces when shit goes down, sufficient mental discipline to stay alert when nothing has happened for 10 hours in a row, twice a week, for the last six months.
10%: size, strength and fighting skills

You usually have one or two fighters in a security team, which you unleash when needed (often the smallest) 5-6 mountains who are there to prevent funny ideas just by their aspect, and most of all, an intelligent experienced leader who can hold all that meat in line and defuse most situations without fighting.
