Ex competitive swimmer here. Swam from 3yo untill 19yo, even going to the nationals in my country.

You're going slow. When I started swimming I was doing 1750 yards (1600m) in 30min at month 3. If you want to build muscle and lose fat you need to learn to push yourself. Losing fat is about doing long distance, building muscle is about doing sprints. In both areas you need to push yourself.
