There is a very high chance you would win against a cheetah as long as you dont give up/bitch out midway through the fight.

I'll tell you why :

Although still comparatively strong against an AVERAGE human, a cheetah is actually pretty weak compared to a tiger. I've had juvenile tigers swipe at my feet playfully and it felt like being hit by a baseball bat even though i was wearing heavy workboots. Strength wise, i'd say a cheetah is about as strong as a big rottweiler/med sized mastiff

Fun fact : a cheetah's bite force are so weak they are physically incapable of tearing through your neck, let alone maul/inflict serious damage through your muscles in your limbs. Unlike a tiger/jaguar who kill by straight up biting through your spine/skull, a cheetah kills by grabbing hold of an animals windpipe and hold it til they suffocate.

Also a cheetah are kind of a bitch compared to other big cats desu. They rely on their speed to hunt, so their instinct is to always avoid fights so they would hiss/claw their enemy first, run away second and bite back as a very last resort. I've only been bitten by 1 cheetah over 10 years of veterinary career and its only because i accidentally cornered it.

Cheetahs are fast, but they are not quick as in they cant accelerate very fast very suddenly. Also, they have shit cardio because they heat up very easily, a cheetah cant run around more than 30-40 seconds without having to stop to catch their breath.

Note : all the big cats who i've handled are usually domesticated ones (i live+work in dubai, so the rich arab locals keep these like you would keep a dog/parrot/other normal house pets) so i imagine wild cheetahs would be more ferocious/brave.
