Look up iron Mike zambidis. He fights taller guys all the time. Technique is king, but physical advantages are huge.
Height matters most in striking, while weight being the bigger factor in grappling.

Right now I'm 6'0 and spar against a 7'0 bloke, and I usually do pretty well just because I'm more aggressive and more agile. Vs smaller people (5'0-6'0 range) I always have an advantage because of those two /and/ height..

Long limbs have their use on the ground as well if monkey man isnt a weakling. Makes a lot of chokes easier. If long arm guy doesnt have enough strength and goes against a stockier guy with around the same skill level arm manipulation can be easier for the shorter but more built guy. E.g. americana/kimura/armbar.
Examples: tony ferguson and ovince st preux for chokes, frank mir and fedor for arm locks. In grappling the advantage isnt as clear cut as it is in striking, it's more about certain techniques being being easier to use against different types of bodies
