Is it bad to stretch sets out throughout the day? For example, doing one, and then doing another 15-30minutes later, until you've done them all? I'm extremely busy and don't have the time to spare an hour working out

Yeah I'm skelly tier and looking to get bigger. Have been working out for about 3 months and have seen results but my schedule is getting crazy and I don't have the time to commit a solid period of time to workout, I can do a set and then return to it about 15 mins later

As long as you complete the set and i mean really complete it, until you can't do one more rep, then you can stretch it out and just work different muscle groups when you have time.
Compound exercises will probably not benefit you that much so i would suggest only doing isolating exercises when you can't spare an hour for a workout.

Of course, you'll burn less calories that way but you can always cut later.
