I exclude the ground flax, substitute one (large) egg for the egg whites, and remove them from the oven after only 15 minutes at 325. Takes no more than 20 minutes to prepare. Yields four decent sized, moist muffins. Wish I'd taken a picture of them, but I scarf them down almost immediately upon taking them out of the oven.
