I want to be flexible like pic related, but I can't even come close to being able to touch my toes as I lack mobility in my hip/waist area, probably a result of being a sedentary skelly playing video games with bad posture for years. What sort of stretching or foam rolling do you guys do to be more flexible?

Nailed it. DeFranco's limber 11 for a few months. Stretches that helped me the most are butterflies, piriformis, and hip flexor stretch. I was never able to touch my toes in the past, now i feel tight if i am only reaching my toes
