to answer your questions, saturated fat should be between 7-10% of total calories, assuming you lift. How much sodium you need is based on how much you sweat/how long you work out, so you'll need to figure that out first. Of course sodium does affect your health, but as for the appearance of your physique the only noticeable difference is water retention.
