How does /fit/ know they are getting accurate portions? Is using a scale too autistic and unnecessary?
I use a kitchen scale, It's just nice to have.
But I use it for other things since I mail things a lot.

If you're cutting, first measure a few stape meals you want to include in your diet for the first few weeks. After a while, you basically know how much to use for each meal and you can eyeball it.

I'm recovering from back surgery and while I was hurt I gained 50 fucking fat fuck pounds.
What's the level after cutting? Anorexia? lol yeah, I'm feeling overwhelmed.
I make two identical meals. One I eat and the other I burn in calorimeter.

This one, number one seller on Amazon. Also, after some use you will get used to what a portion size looks and feels like so you don't have to pull it out in front of guests.

pretty much this then you can say a handful, palmful, pinch, table spoon etc etc you get the idea
Learn to use your hand as a measurement tool.
use a measuring cup. Fill your hand with it. Determine how much of a cup your handful is.
same with finger sizes etc and using your body as a tool of measurement
when bulking, underestimate the caloric value
when cutting, overestimate the caloric value
