in a pistol squat, the loaded knee goes inwards more than it should to keep center of gravity of mass over that foot.
same thing doesn't happen in bilateral squats because it's a symmetric exercise.
but pistols shouldn't be a problem if you do them unloaded once a week for a few sets and you're not fat.

Shit sucks, m8s. I also used to love those leg curl machines, for whatever reason they hit my calves better than anything else. Same deal there, though: completely wrecks your knees.

gastrocnemius is the most superficial calf muscle, which is connected to your achilles tendon and at the bottom of your femur (upper leg bone).
that means that if you contract it, you close your knee.
if you point toes up towards your leg, they're stretched enough so that they can help the hamstrings in a leg curl.
if you point toes down, they can't help, and only the hamstrings will be used.
