I normally eat beef/chicken/salmon/pork with potatoes/rice/pasta with some veggies for meals, is that "eating clean"?

Eating clean means eating minimally processed whole food that's nutrient dense and typically lower calorie, like lean meats for example. Dirty eating refers to highly processed refined foods that are nutrient sparse and typically higher in calorie, like packaged convenience food for ex.

Just adding on to what I said, remember it's not totally one to one. Trail mix for example is packaged convenience snack food, but it is clean eating unlike most bags of chips Fatty pork is high calorie but it is also nutrient dense and can be considered clean, especially if you are trying to clean bulk rather than dirty bulk. Pasta on the other hand can be considered dirty even if you just eat it with tomato sauce because it isn't very nutritious for the amount of calories it has. Basically, if you are goal is to eat clean stay away from refined foods which usually have a lot of additives, preservatives, and excess salt, sugar, and fat. So for instance, if you are eating breakfast cereal (sugary or not) switch to oats.

Rice and pasta are clean depending on where you buy them.
For example, something like "minute rice" is absolute garbage. It's usually stripped of all natural nutrients so you might as well be eating cardboard.
But something like wild rice or brown rice is a great source of fiber.
Same goes for pasta it just all matters where you buy it or who you buy it from.
