Why am I gaining weight?
I eat 500-1000 calories a day, and am getting fat.
I work out every day, I just don't understand how is it possible.

Shit. I lost a lot of weight last year due to stress, but I used to be fat for my whole life and had body dysmorphia, now I finally started working out, and am just getting fatter, but am still underweight.
What can I do about it? I just want to live healthy for a change.

Yeah, I finally got some muscle, but fat, too, what I don't understand is how I was heavier when I was very skinny than now.
One more thing I find quizzical is how I can gain and lose 7 pounds in a week.
I also started taking vitamins and iron, because I'm battling anemia.
But the whole situation seems so paradoxical, I don't know what's right or wrong, and what should I do for the best possible outcome.

You WILL gain fat and probably get to like 25% bodyfat if not more
Don't stop eating unless your body tells you to stop. Just turn off your brain and ride it out, it gets better in time. What's most important is just to get calories and nutrients into your body so you don't fucking die.

I started last week, and have no problem with it. One of my proudest moments was when I realized that I can do clap pushups.
