Over the past 4 years I basically went from 6'7" 165 lb freak athlete to 6'7" 240 lb big guy 4 u but not athletic.
What can I do to improve overall athleticism? I want to work on mobility, calisthenics, agility etc on off days but no idea where to start.

The best ways in my opinion are sports like football, floorball and basketball etc. Not sure how to improve it if you can't do those kind of things though. Running does grow the long muscles in your legs which helps.

I used to play all of those things plus soccer in high school but I have a torn adductor that flares up with tons of cutting in sports.
