Frozen veggies are picked at the peak of freshness and then immediately frozen. Fresh vegetables are picked prior to the peak of freshness as they finish ripening in transit to grocery stores. It is because of this that frozen vegetables will generally be more nutritious than fresh unless of course you buy directly from a farm. I can't exactly remember how much of a difference it is but I want to say it was something like 25%. This information should be pretty easily accesible online. Can't comment on canned.

Frozen foods have always tasted a little different to me. Not "bad", and maybe it's even a psychological thing, but just a little different.

Canned veggies are heat treated and because of this have less options than fresh or frozen. Nutritionally the same though.

Fresh just gives you the most options on how to cook/prepare it. Can't make a nice big crispy spinach salad with frozen or canned spinach.
