Indeed, this concept is very wrong and easy to confuse.

Your body only deposits energy in the form of fat reserves when you have more carbs then your minimun requirement. When your body can't fill it's calories quota with carbohydrates alone it starts burning fat and protein to cover the remaining energy cost, and it does not produce any excess that gets converted into fat tissue on your body.

The problem with eating a lot of fat is not your weight but rather your circulatory system. That fat gets deposited into your arteries and veins and will eventually clog them. This will either kill you, cause disability of limbs and/or speech or force you to have a surgery called cateterism, in which they stick a needle in your arm that moves inside your artery all the way to the clogged location and pokes it until it moves.

This is by no means fun so you should avoid excess fat or face the consequences.

I know many fat vegans, vegans even more so than vegetarians. This is why:

It's usually easier to order the carby, fatty item on the menu that is already vegan/vegetarian than to think about shit like your macros or eating cleanly. desu it's easy to break 3k cals + a day without meat. It's not even the meat that will make you fat it's usually everything else around it.
