Because Im making a huge assortment of chocolate pastries for Easter, and I have to add milk and fat to form a useful ganache.

If it were all pure, it would be too tannic and bitter a contrast to the other ingredients.
A nice oddity, but not too appealing for the theme im going for. Also, wasteful.
