I'm 183cm 75kg, ever since I started a newbie-routine, I've been losing weight.
I think it's because I struggle to eat large volumes of food and I generally feel full after very little. What are some super calorie-dense foods I can eat to gain some mass?
Also macros are hard to hit, I usually just eat whatever and end up eating way too little protein and fat and way too many carbs. How the fuck do I reach 3000kcal with 200g of protein per day?

Oats.
If you really want calorie-dense foods, then go with meats and ice cream. Just don't go overboard on them.
If you don't value your kidneys, eat 4 scoops of Muscle Mass (tm) a day. It's just short of 1200 calories. Just youtube it, you'll see the recipe.

You could take half a serving of mass gainer with breakfast and dinner, artificially add another 1000 calories to your daily diet. But people here hate massgainers here for some reason

Try eating more calorie-dense foods, and maybe try increasing the volume of food you eat incrementally
191cm went from 71 to 81kg, heading for 90.
At first I had to force myself, and I found smoothies or anything liquid was easier to stomach than large meals.
Now, my appetite has increased to the point where my hunger is forcing me to eat. Mostly oats and dairy products still.
