Anyone know the timeline on this? The line in the show is gaining and losing 60lbs in 3 months, but I don't have any reason to think this is true.

That's just a joke, it's not true. He apparently spent 5 months gaining weight, and he gained 52 lbs. As soon as shooting for season 7 stopped, he started losing weight. He lost 23 lbs in a month and presumably was back to his old self by the start of shooting for season 8

There was actually an article where he said he hired a offensive lineman coach from some football team "specializes in getting o lineman fat" he basically said he thought it would be funny if all the characters got really fat but nobody wanted to do it with him so he just did it by himself. He said he would eat Big Mac Meals and a lot of fast food because it's easy to get thousand calorie meals from McDonald's
