I'm focusing on cutting my body fat percentage, and then making gains once I get around 15%.
How good is swimming for me to accomplish this?

Can't explain the science behind it but apparently swimming makes you hold on to body fat in certain areas from what I've read.
I have had the best luck with running for getting to low bf%.. the only problem is my knees cant do it for more than 2-3 hours a week where as I can bike for 10-15 hours a week if I wanted to. I hate swimming so I don't know how it would work for me... best is a good diet

Dunno. I imagine if you swim hard enough and your calories are low enough it won't make a difference. Something to keep in mind I guess if after a while you're not seeing the results you hope for.

Hmm, I suppose it helps that I swim in warm water. And although I remain at a calorie deficit, I do tend to eat a lot of carbs after a swim.
Fish tacos would be a good post workout food right? Lean protein and minimal carbs?

Unless you are learning a stroke you should be swimming correctly for good fat burning

As someone who is a ex squad swimmer who used to compete at state/national level and currently works as a swim teacher while doing uni I can pretty much tell you right now that you aren't swimming correctly if haven't done a significant level of swimming with a coach who has looked at your stroke and technique and corrected it. If you used to swim you're probably alright but you're still probably not doing it right, I'm a very good swimmer but I know just from how I feel in the water that I know my technique is not as good as it was when I trained 6 times a week with a coach, to swim properly you need someone looking at you and adjusting your stroke constantly, the small amounts of muscle or height growth can completely change the way someone swims, and if you haven't swum in a while it's even worse.
