I'm still playing around with the ingredients to reduce the calories even more and get a better texture but so far-

Get everything as cold or frozen as possible before combining, including containers- it helps reduce ice crystals if you're storing the ice cream for more than 24 hours

Combine your casein with whichever liquids you're using and beat/whip them til the casein proteins stretch and it all thickens up and fluffs up
Meanwhile blend your other ingredients, combine when ready, xanthan gun added last (thickener)

Basically any combination works so long as your casein is ready fluffed

Pic related is a bad pic as it's a test batch and my new stuff is more fluffy/creamy but it's all I have on here

I've also been playing around with erythritol and xanthan gum for custard but so far cornstarch is better

Whey produces something closer to milk for ice cream, casein actually helps add volume, texture and thickener. So adding whey powder is fine but casein is better. Both is fine too.

If you can't make protein fluff you wont be able to make this, it's the same technique for the volume and thickness
