Alright, I looked up protein muffin recipes and I assumed bodybuilding.com would have some good shit, so I made the "Whey great protein muffins" from this article: http://www.bodybuilding.com/fun/7-amazing-breakfast-recipes-from-7-industry-experts.html
and used vanilla whey 1/2 scoop instead of "chocolate cookie whey" and used blueberries instead of chocolate chips. When they came out of the oven, I swear to God they tasted like burnt egg with berries mixed in, it was absolutely terrible. The protein pancake mixes I see look a lot like this recipe, so I don't even want to waste my time on them. For some reason this shit doesn't use flour, which I didn't think much of when I was making them but realized how terrible it was without it. Anybody got recipes for actually good protein muffins/pancakes? I don't care how complex they are I just need something other than bagels to eat for breakfast.

Delivered. I eat a whole batch, 12 muffins, literally every day and have for months now.

Blueberry Muffins

Ingredients
135g (1 cup) cup pancake mix (ie bisquick)
40g protein powder
1/2 cup baking stevia
2tbsp cinnamon
1 tsp ground nutmeg
2tsp vanilla extract
1/2 cup water
1/2 cup nonfat plain Greek yogurt
92g egg white
1/2 cup chosen fruit

770cals, ~60g protein for all 12 muffins.

Instructions
Preheat oven to 400 degrees F.
Whisk together dry ingredients.
Mix in wet ingredients, folding in blueberries last.
Lightly coat muffin cups with cooking spray, then distribute batter between cups.
Bake ~25 minutes.

Yep. Thanks to the healthy ingredients all 12 muffins come in at 770 calories for the whole batch, which isn't an astronomical number for a single meal. This is how my IIFYM diet works - focus on very volumous but low cal, high protein recipes.

Here's another version, chocolate salted muffins. Same recipe but sub the 1/2 cup fruit for 30g cocoa powder and use a chocolate flavored 40g CASEIN powder instead of 40g vanilla whey.

Other variants - pumpkin spice, mixed berry.

Savory option - same base recipe but throw in minced garlic, fat free shredded cheddar, onions, italian spices. Bomb ass cheddar garlic muffins similar to Red Lobster biscuits but infinitely healthier, all kinds of protein.

You're my hero, Balconybro. I have a serious sweet tooth and love baking, so these look like heaven. Gonna buy some Bisquick next time I run to the store.

If I'm seriously craving some baked goods I usually make these, although I prefer using chocolate protein powder to vanilla. Instead of the chocolate drizzle, I typically spread PB2 and/or some sugar free jelly on them.

These look pretty tasty, I've tinkered with several protein oatmeal cookie recipes. Will give them a shot. Looks like about 600 cals for base recipe + whatever add ins you choose.

I could post up sweets/baked protein creations for days, that's the shit I make on a daily basis. Them cheesecakes tho.

long time ago there was a /fit/ pancake recipe. i adapted it to this:

>heaping half cup of oats
>four forkfulls of cottage cheese
>one egg
>a little bit of water – depends on how much whey is in the cottage cheese

>all ingredients into a bowl mix with a fork into a firm mix – not too soupy or the pancakes won't stick together.
