Is this a meme? Can we (newbies) gain muscle mass in a caloric deficit and lost fat in the first months of lifting?

While your CNS is adapting, you are not applying enough stress to the muscle to do significant damage to it, although you still are gaining muscle slowly.

Once you increase the amount of force you are pushing, your muscles get damaged enough to super compensate.

Glycogen is mostly for endurance, but it doesn't take much to trigger adaptation for it when you're just starting out. The water comes with the glycogen because that's how it's bound.
