Someone told me that when you eat simple carbs they are digested quicker so if you dont burn them quickly they will get stored as fat

Complex are the multigrains

But things like bananas have a lot of natural simple carbs. So you're correct in that you need to burn them quickly (i.e. before or after working out/cardio usually makes me feel better without it turning into fat)

Simple carbs are GOOD after very intense workouts which depletes your glycogen storage in your skeletal muscle. Carbs are carbs it doesn't matter if they are complex or not its just a matter of time difference when your body deconstructs it as a usable glucose molecule.
If your glycogen storage is full, taking carbs will make your body store them as fat.

What makes the carbs simple? I mean for wheat and rice processing isn't it just removing fiber?
I've been assuming the carbs in starches themselves are the same: amylopectin and amylase to a lesser extent, and that the difference in glycemic index just comes from starch concentration I.e. just starch vs starch with fiber mixed in. Can anyone verify? Or does refining reduce branching in amylopectin making it easier to break down into glucose or something?
If you are eating simple carbs is there any benefit to maple syrup/honey versus table sugar/processed sugar?
