Was doing a set of dumbbells shoulder presses and felt good about using 75lbs dumbbells. Huge guy goes on bench next to me and shoulder presses 120lbs dumbbells for reps. Was mirin hard but it made me feel like a pussy.

You're trying to do to many things at once, or do things you're not good at.
Perhaps start doing a bro-split. working in the 8+ rep range on all lifts and maintain strength as best as possible. The main focus on diet and getting shredded.
Once you get shredded you can start a new goal.
I think you go from beginner/casual lifter when you can do 1/2/3/4
