Birds are super closely related to dinosaurs. I bet they'd have a mix of both dark and light meat depending on the individual species lifestyle. Dark meat is higher myoglobin concentration meaning frequent used muscle, like legs on a chicken. Light meat is less frequently used like wings on a chicken. So Dino legs are definitely dark and arms would be light for bipeds and dark for quadrapeds.
