Because they aren't a particularly good exercise for most purposes.
They aren't great for ab usage (too reliant on the hip flexors), are hard to load effectively and require spinal flexion (which is mostly bad under high weights or repetitive motions - guess what people do with situps to work around how easy they are).

The sit up isn't an ab exercise.
It's an exercise to strengthen the muscles associated with the "front hinge" of the body.
