Jesus. I know this is bait but I guess I'm hooked. As much as I love raw food, the second any amino acids and proteins hit the hydrochloric acid in your stomach, they denature. Cooking ahead of time doesn't ruin shit.

Steak tartare and frites is my electric chair meal. I used to get it tableside at Les Halles all the fuckin time when I used to live in NYC.

But all of this is patently untrue. Your body denatures the proteins as part of the digestion process anyway - there is no protein absorption benefit to eating raw meat.

That is shitty "steak" tartare. Steak tartare should be minced meat, not ground. Grinding ruins the texture.
