I think he's worrying about too much protein. Protein converting to glucose can take you out of ketosis.

58% of protein turns into glucose in the body so that's why I'm trying to limit it. Only 10% of fat turns into glucose. And obviously 100% of carbs turn into glucose.

Nah, there is no evidence that excess protein increases glucose production. Also you should experiment with yourself rather than pulling out random statistics. It depends on your metabolic demand, my needs are obviously different, but relying on arbitrary numbers from low sample size "research" is why people call keto a meme.

It's not excess protein, it's protein in general. That's why fat is considered more important to the diet than protein (or carbs obviously).
