How do you guys eat enough protein? Eating 0.5 - 1g of protein per lb of bodyweight seems like an unreasonable amount to reach every day.

It's 1 - 1.5g per kg bodyweight ffs
putting more food of a certain type in your mouth, chewing it and swallowing it really sounds like a task impossible to accomplish, I agree
It's not easy if you're doing solid food, but a shake with like 50+g makes it pretty simple to hit the mark for me.
It's also lean body mass, not bodyweight. Err on the high side though.
20-24 oz of chicken breast (measured raw) a day and a 50g protein shake.
A lot of chicken + 2 scoops a day.
It's per KG of LEAN BODY MASS. So if you weigh 100 kg you don't eat 100 kg you probably only need like 70-80.
