Are weighted vests useful, or do they put unnecessary stress on your ankles? I wouldn't use it for running, only for everyday hiking.

Weighted vests are useful for certain movements (chins, dips), but for things like running and hiking, not so much.
You know how fat people almost always have shitty knees and how military bros develop knee problems? You're essentially doing that just at a lower weight. When walking, the knee doesn't bend that much, which forces the knee joint to support a lot of weight

The vest distributes the weight around your spine better, but it's still the same amount of weight coming down on your knees. Ankle weights will just force you to walk in a way you're not used to, which increases risk of injury.
If you want to combine resistance training with cardio, do shit like prowler pushes
