I have some general questions if anyone is willing to answer:
1. Are rest days important? I've been working out every day for about one hour. Can I just go 7 days a week or is this bad in some way?
2. Been doing ab work outs daily too. Getting sore in my lower back/tailbone area from doing crunches. Is my form wrong or is this normal?

1. It depends. As a rule of thumb, individual muscle groups need a minimum of 72 hours of rest. That means if e.g. you have a 3-day split. You can train 6 days a week provided you cycle between day 1-2-3 the first 3 days and again 1-2-3 the following 3.
That said, recovery time veries wildly among individuals and if you're new to lifting OR have just started a new routine, it might be a good idea to let your body adapt before hammering it.
2. Lumbar pain is a common side effect of ab work. Your lumbar erector spinae is an antagonist of the abs that will stiffen when ab strain is insufficient in straightening your core.
You should always strive to minimze that be deeply engaging your abs and squeezing your glutes during exercise. It's okay to have that from time to time but if it starts to hit outside of ab workouts, then you're either:
a) overloading your core
b) not engaing your abs hard enough
c) not releasing tension properly after the workout through mobility exercise, which you should always do in order to speed up recovery.
