Bit of olive oil

>heat pan with oil
>season veggies with salt, pepper, rosemary
>add to pan
>don't fucking move them, allow that brown caramelization to form

>add your garlic now, it burns if you add it too early

make a paste out of some coriander and garlic cloves, throw the veg on a skillet and cook with the paste and some soy sauce. i add a lil olive oil too but thats just me.
