I weight about 350lbs.
Today I walked 3 miles in about 55 min.
My goal is finish a mile faster than it took me last time.
First day was 20 min mile.
Second was 18min mile
Today was 17min mile but I decided to walk 2 more.
What are the pros and cons of this?
Will I destroy my joints at this pace?

You're going to hit your limit of what you can do in a bit.
It's inevitable for people your size and coming from a place where you were probably sedentary as fuck.
Once you start feeling pain in your joints during after or the following day you're going to have to slow down a bit and go at that pace for a good a full week or several days at least.
Yeah I know it's not glamorous or cool. But those small changes right now will pay massive dividends later.
Trust me.
This is comming from a man who all but destroyed his already fucked knees by doing constant daily pavement pounding at 340lbs every fucking day.
If you want something to do outside of speed walking then find a simple exercise plan to do as well. I suggest some basic yoga or calisthenics.

Go exactly 2 miles, get it done as fast as possible.

Go for 40 minutes at a sustained pace. Even if you're only waddling at 1mph, keep a consistent speed. Obviously faster is better

When I do go for speed I do a 5min warm up at 3.5mph then I jog at 4.5 for 1min then 3.5 again for 1.5min untill finished with the mile then I walk at 3mph to cool down.

Helped me out with an old football injury.
I wouldn't put on a leotard and stretch around in public and what not though.
But if you're too self conscious to even do it in the comfort of your own home then just try simple calisthenics. Those are simple direct and will get you fairly strong.
