You should do physical tests (with a professional would be better) to diagnose what the issue with the shoulder is. Is it on the internal rotation, on the flexion, on the socket, one of the joints or one of the rotator cuff muscles, etc...

It's likely not a strength issue, but a mobility deficiency from one of those or other things.

I think the whole DLing a lot in a minute works well for grip strengthening and endurance/core work, maybe not so much for actually strengthening the hip extensors.
Deficit DL and regular sets will work better if the goal is getting volume to strengthen the movers.

You won't be able to go far with this no matter how much you try. It will bottleneck your movers, which are much stronger and have more potential strength than the grip muscles in general.

If you really don't want to do mixed grip for whatever reason (I can't think of a decent one), then start learning to hook grip. Then you can alternate between DOH lighter sets and hookgripping heavier sets.

I was under the impression that, although volume should fluctuate, the overall trend should be upwards. Otherwise your period of high volume won't be sufficient to increase work capacity beyond the level achived as a result of the last high volume period - if the level of volume you use is the same.

1. Adapting to for example 25 sets of squats per week takes longer time than adapting to 15 sets(assuming they are of similiar intensity). Meaning that you will stall sooner on lower volume(and then increase volume to force more strength gains). Higher volume programs will "last longer".
2. Doing more volume (as long as you can recover reasonably much during the program) will in general lead to more gains than doing less volume.
3. As the tranny says, by doing lower volume blocks(peaking or just lighter training) you become used to less volume and can make the same adaptions again.
