The original. Do tabata. 20 seconds full sprint, 10 seconds rest, repeat 8 times for 4 mins total.

totally new to HIIT, but are all HIIT running or sprinting?

are there lifting or calisthenics HIIT programs as well? Also, if I'm following a lifting program that has me lifting 3 days a week, should I do tabata (from what I can tell, 4 days a week) every day I lift and then one, or just ever rest day?

Tabata is kinda on the rage right now if your gym has a machine for it. Swimming is also good. The cheapest easiet way is with jump rope, you can take it anywhere, change it up how you want, dont have to be at the gym for it. Just follow most hit time protocols and youll be alright.
