What do you do for legs (read: rest day) so you can't walk the next day?

well their are hard to train as in it literally physically draining so there is that. if you don't want crazy hyoooge quads and legs in general you don't need to do barbell squats. you can do weighted lunges or pistols (or a progression leading up to pistols since they are hard to do if you haven't trained for them) and focus a bit more on the mobility of you legs. you can always add barbell squats into that mix.

deadlifts too but not on leg day and those aren't strictly leg. Can't squat because of my shitty hips, went to physical therapist about it. Can't legpress either. I'm pretty unmotivated about legs because of that, but I need strong legs for DL still and don't want to look completely ridiculous

Squat 2-3 per week. 1x heavy, 1-2x lighter days. You won't get doms anymore once you adapt, amd you'll have good leg development.

I know this is going to sound crazy, but squat more? Either increase frequency or add sets. You'll get better. Also make sure you're eating well amd resting properly
