How do you fags keep your baked chicken from drying out? I can spice and butter the shit to hell and back but it stays fucking dry as balls.
Soak it in milk for a few hrs. Or any marinade really. Completely cover it in tinfoil too.

I cook small/medium pieces for about 25-28min on 200c. It's very easy to overcook chicken in the oven, even a couple of extra minutes will ruin it.

marinade if for at least 6 hours, then cook it in a pan to brown, followed by cooking it in an oven until they're 60C inside.
Alternatively, you can sous vide it, then sear it in a pan.
At the end of the day, you need to cook it to temp unless you want inconsistent results.

Spice the 3lbs or so of chicken, sear it for a few minutes on a hot pan. Then put it in a cup or two of buttermilk for about half an hour in the oven at 400f. Never dry.
