I also subtract my body from my bench, except for my arms which I add.
For curls, I add only the weight of my forearms and hands.
For side laterals, I count the entire weight of my arms from the shoulder down.

No, you dont, strenght compared to bodyweight is relative. When you get heavier you are also supposed to get stronger, so it doesnt count.
The only thing that adding bodyweight to your squat max does is allow you to brag about it to others while in reality u squat alot less

Uh size is not relative to strength, you have a strength constant of 1lb of lean muscle = 5lb increase in weight.
If I put on 4lb of fat and 1lb of muscle I'm only lifting 1lb more. You add the 5lbs to your total so...

Count your body weight but don't count the bar. The bars weight stays the same, so it doesn't matter. Your body weight fluctuates constantly. To maximize gains you need to know how much you lift ever time, down to the decimal
Am I supposed to count both sides as well? I could not even unrack when trying to lift my bodyweight worth, which I hear is the dyel-limit (165 on both sides plus 45 for the bar and my weight from the waste up ~110).

When doing squats its best to use the following formula:
Bodyweight : BW
Total Weight to be lifted : TW
Actual Weight lifted = BW*0.5 + ( TW*0.25 - 45 )
For example if you weigh 180 lbs and squat 300lbs you actually lift 120lbs
180*.5 + (300*.25 - 45)
If you are confused about the calculations I will explain,
You only count half your body weight naturally hence (BW*.5)
(-45) is based on the fact that you must NEVER count the bar. ( TW*0.25 - 45 ) when you put weights on either side of the bar, those weights actually exert force towards the middle of the bar actually helping you lift upwards.
