I just did 2x10 of pic related (with non-faggot weights). Turns out I'm just too tired today so I cancelled my entire training.
Now, is there a way I can start back tomorrow and repeat pic related to my usual 3x10 without overtraining?
I don't want to fuck up my schedule.

Maybe lower your reps but keep the same weight. For a while, I was stuck at 60 lb barbells for my press, then I cut out the 3x10 and moved to a 5x5. After I felt comfortable with that set, I moved back to 3x10 and was able to progress again.
Also, your schedule is not holy writ. If you don't really feel like doing deadlifts one day, don't. It's better to go light one day or miss it entirely than risk an injury that will reduce your overall efficiency.

go thru various rep ranges
do sets of 5, 8, 10, 12, 15. if you keep doing only sets of 10 you'll stop progressing pretty damn fast, as you can tell

in your case yeah it probably won't matter at all if you do 3x10 tomorrow
overtraining is accumulating more volume over time than your body can handle, I only got it once and that was from lifting 6 days a week, I was waking up in the middle of the night with heart racing and would get like 4 hours of sleep, felt hot all the time, got a lot weaker
it took a lot more than doing 3x10 db bench
