Beginner here. Is this necessary for aesthetics? Don't really want T Rex mode. Can't I just hit squats twice a week instead and still make gains?

Squats 2x week are fine, literally every UL/PPL/PP split does that. 3x week is good too for the first 3-4 months. After that you should manage the volume carefully if you want to progress (neither overtrain nor undertrain)
