Swimming is probably essential to any trap bod for that all around athletic look.
If you hate mindless swimming then try jumping up from the bottom of the pool, catch your breath and relax for maybe 5 seconds, then go under and back up. Do this as many times as you're comfortable doing. If you want to exert yourself make sure a certified lifeguard is present.
Add some baby weight to your squat. Just the bar is stupid and you might as well just squat without it.

Is there a general rule of thumb for adding weight? How many reps/sets should I be able to do before moving up? Lunges sound like a good idea; I'll have to try that soon :)

Take lessons for swimming. It's fun an rewarding, and you'll be among others with no swimmers confidence.
There is no rule. It depends on your body's progress really. More weight = more tearing + recovery = more mass.
Lunges can be weighted and/or explosive.
