Gymming everyday vs Mon/Wed/Fri ?

It depends what split you do, like if you do more and intensive workouts on three days, with rest days in between, then yeah. But if you prefer to concentrate on specific bodyparts and single things out, then everyday might work better. It all depends on you and what works most for you.

Do Mon, Tues, Thurs, Fri.
Squat, Bench, Deadlift, OHP. One main lift separated by those days specifically.
Wednesday do cardio.
