can you do HIIT every day? usually i do 5-10 mins of treadmill/elliptical/biking with 30s intervals(30s sprinting, 30s rest) if i do that every day is that too much? i heard you should only be doing HIIT every other day?

I'll give you some HIIT sets. Here is what I've been doing recently.
>Stretch
>400m Easy Free Warm Up (60%)
>400m Choice Drill
>Main Set:
>10x100m Free under 70sec. e.g. if you swim 65s you get 5s rest, etc.
>5x50m under 35.
>200m 100% all out.
>Cooldown: 400 Choice

I can do freestyle just fine. The most lengths I've ever done 25m pool are 42 without stopping but normally I just do 30-35 on a regular LISS session. Does that help?

Man a simple 50m free, 50m breast is usually pretty good and considering you're only just pushing 2km it'd be with doing that if you want to bang out distance.
If you're going for intervals, just do sets of 200m free, keeping your speed relatively constant, and have a short break after each.
Otherwise you could get into some watercolor drills. A 25m sprint followed by 1 min egg beater water treading will get you going. Again, do that four times for your set, rest for a few minutes then hit it up again and you'll be shredding it.
